    Every sake is different, so there is no one size fits all way to enjoy sake. Some bottles will lend themselves to being served hot, others cold

  • Why Kyotango

    Kyotango is well known for it's natural beauty giving it clean air and water. There is also ample land dedicated to growing rice, one of the main ingredients in Sake making.

Using only three ingredients (rice, koji powder, and water) master sake brewers can make a variety of flavors and intensities.

Despite being made from rice many sakes have distincly fruity tastes, often of melons or apples. They can be sweet enough to have for dessert, or have deep intense flavours which would pair well with red meat.

While many sakes are best drunk fresh, a growing trend is to age them to enhance the flavors and discover new ways to enjoy this ancient drink.

The most common ways to serve sake are chilled in the refrigerator, room temperature, and warmed up to 40-50℃. Some sake will even be suited to temperatures outside of that range, although if chilling with ice be careful not to let it get too watered down. When heating it up either using a pan of hot water or microwave are fine, make sure to check it regularly so that it doesn't overheat.

Many bottles will indicate the optimal serving temperature, and then let the season and your mood dictate how you want to have it.

Depending on the sweetness of the sake it might be better off by itself or as a dessert wine. But many less sweet sakes pair very well with food, either Japanese or western.

Kyotango has a long history of rice cultivating and sake brewing. In fact it even has a claim to being the starting point of Japan's rice growing culture, dating back over 2000 years.

This history and the superb rice growing conditions has led to a high number of sake breweries being established in an area with a low population. In recent years this has led to friendly competetion where each brewery has distict philosophies and brewing styles.

The sake produced by Kinoshita Brewery is known for being robust, maintaining great flavors at a range of temperatures and maturing over time.

The umami flavor and robust profile of their Tamagawa sakes makes them enjoyable to drink by themselves. but they also complement a wide range of foods, bringing out the best flavors.

KUMIHAMA AREAKUMANO BREWERY

Although Kumano Brewing company is relatively young, it was formed by merging several breweries together, whose histories date back about 300 years.

The master brewer takes inspiration from the natural surroundings of Kumihama Bay and the changing seasons to produce a range of sake with unique and delicious flavors.

    (The Master Brewer's Monologue)

    Made with locally grown Koshihikari rice, which is not usually used for sake making, this sake has a distinct flavor. The master brewer also uses the finest spring water in town to ensure the best result.

YASAKA AREATAKENO BREWERY

Making sustainable long-term connections with local rice farmers is an integral part of Takeno Brewery's ethos.

Many of their sakes are made with rice that were originally grown in Kyotango. In some cases local farmers have taken small supplies of rare grains and grown them into larger amounts suitable for sake making.

Through making these connections, Takeno Brewery helps support local producers and the community at large.

Shirakiku Sake Brewery Kyotango

OMIYA AREASHIRASUGI BREWERY

Shirasugi was founded in 1777 and is still run as a family business. Now on its 11th master brewer, they have made the unusual choice of exclusively using food grade rice rather than sake rice like most breweries. By doing this they hope to capture the simple pleasure of a bowl of white rice in liquid form.

Exclusively using food grade rice gives the sake produced here a distinctive taste.

Nestled in the center of the Tango Peninsula Yoshioka Brewery uses local natural resources to make sake the same way it's been done for generations.

The water comes from the surrounding hills and imparts a pleasant sweetness to the sake made from it.

Kyotango Local Sake Imotan Shochu

MINEYAMA AREATANGO KURA

Tango Kura makes Shochu, a spirit distilled from sweet potatoes. They use the Kyoto branded "kyokansho" varity of potato which is grown locally, helping local farmers and improving traceablity of produce.

The water used in making it comes from under the nearby Kotohira Shrine. This slightly hard water imparts more calcium to the shochu produced here.

YASAKA CHO AREAMAIRINGEN DISTILLERY

Kyotango Mairingen distillery uses over 300 species of wild herbs and botanicals which are hand-picked up in the mountain forests of the Tango Peninsula to create a craft gin with the "scent of the forest".
